Seriously...I couldn't live in a place where bacon was not available.

I quit buying bacon at the grocery, and bought a hog and had it all processed in bacon and sausage and put in the freezer.

DBM, a couple years ago, we split cost on a hog with a neighbor.  The bacon was so salty, and had little smoke flavor, I couldn't eat it.

The out come depends on the person processing the kill into what you want, I had a local packing house do mine, no complaints at all!
