1 cake mix.....I used Betty Crocker moist yellow but  I suspect spice or carrot cake would be as good. I 15 oz can of pumpkin, one bag of chips...I used Halloween chips with orange and chocolate , 2 cups of oatmeal...and voila!!!! Makes 3 trays minus the one I ate. :-)
No eggs and no butter....healthy cookies.

Quick oats?  Did you add any other liquid beyond the pumpkin?
 
Those look yummy...
 
I know we're not supposed to eat cookies, but damn...sometimes ya just gotta have one...

I think I did eat a whole tray by this late in the day. :-) No liquid was added, the pumpkin was more than enough. I used Quaker old fashion quick oats.

I firt set the time for 8 minutes and added 2-3 minutes to the timer a few times...I just check to see if they look or feel done. They are so moist and yummy.
