I was skeptical, but it's a healthier alternative for hubby, who will cheat on his diet if I don't provide something sweet every now and then


The recipe was in my latest Costco Connection.  And it turned out very good!

I used a bundt pan, but I will admit it was difficult to get out, so next time I'll use my regular cake pans.

I'll tell ya what though, it's rich, and filling.  It says it feeds 6-8, but I cut 8 slices and those are too big.  It also spiked hubby's blood sugars...so I would caution you and also say, cut at least 10 slices on this one...

Emily, Safeway had Hass avocados on sale for a buck each, so I figured it was the perfect time to try it.
