Evolution of my scones...

Today, I used coconut oil instead of Crisco.  Supposedly much healthier for the hubby.  It is a different texture to work with, much grainier, so if you use it, make sure you break it up or stir well before adding to your recipes.  I opted for the organic refined, so we could avoid the heavy coconut smell and taste in different dishes...but overall, with the use of Truvia as my sweetener and the coconut oil, the end product is much healthier and hubby doesn't miss out on his Sunday scones.  Today it was cranberry mandarin orange...fluffy texture and good crumb...I like it.

It's great that you can make all these versions from the basic concept.  The original scones in the UK always had currants in them but they are so tiny and I much prefer other fruit like blueberries or raspberries.
