If it's a zucchini you can do darn near anything with it.  I like to just quarter them, toss them with a little olive oil and either put them on the grill or roast them in the oven with some garlic powder, salt, and pepper.

They can be shredded and baked into muffins, breads, cakes...sliced and used as a meat substitute in lasagna or spaghetti...you can even use one of those "veggeti" machines and turn it into zucchini spaghetti.

I make a pineapple zucchini bread and it's really good.  Also, stuffed zucchini makes a great accompaniment to dinner.  I do a herbed bread stuffing.
