Title: I can no longer fear pie crust...

My son and his girlfriend came over today and she taught me to make apple pie!
 
I am telling you, it turned out soooooooooooooooo good!  She was a very astute teacher, apparently, her mother taught her to make pie from a very young age and she just whipped through it without blinking.  She gave me all kinds of tricks to mixing the crust correctly, how to temper the water to ensure the crust turns out super flaky...and she uses two different kinds of apples...fuji (2) and Granny Smith (3)...
 
I am now challenging myself to make a pie all by myself for Christmas.  Thing 1 was talking about blueberry pie today so that may be on the menu.

Flaky pastry is quite an art and more time consuming - mine is just shortcrust pastry.  I think your son has found a winner.  Granny Smith apples are great for apple pie and Braeburn run a close second.  My mum always used Cox's orange pippin apples for apple pie and they were not good eating apples but delicious baked.  I haven't seen them here.

Good for you taken...I can't make a decent crust so I cheat and buy it.

My husband told me, if you're going to use those, you might as well buy me a store bought pie, because he didn't like the taste or texture at all...
 
But, even though we don't need to eat pie, I am going to go for it and practice, because another aspect is that I have to be able to enter a pie in the fair to go for grand champion and it's stopped me from getting into that aspect of competition for years...now, as I progress, I can get back into competition.
